Hash Brown Potato Casserole (a.k.a. Company Potato

2 lbs. frozen hash brown potatoes, thawed

1 can cream of mushroom soup (cream of celery, cream of chicken, cream of potato, or cheese soup)

1 cup sour cream

2 cups shredded Cheddar cheese

1 medium - large onion, chopped

½ cup melted butter or margarine

1- 2 cups corn flakes or potato chips, crushed




Combine potatoes, soup, sour cream, cheese and onion. Pour into a 9” x 13” buttered baking dish. Mix crushed corn flakes with the melted butter. Crumble over the potato mixture. Bake at 350 degrees for 30 minutes covered, then bake 15 minutes uncovered. Yield: 10 to 12 servings.




Note: Some recipes use two cans of soup – one of each of those above, while some also add ½ cup melted butter or margarine to the potato mixture. I found another that used cubed Velveeta cheese instead of the shredded Cheddar cheese. If desired, diced Spam or other meat like ham can be added to potato mixture. As you can see there are many variations and the recipe always turns out great!!
