Lemon Buttermilk Pie
1 cup buttermilk
1/2 tsp. baking soda
1/3 cup butter, melted
3 eggs, beaten
1/2 tsp. salt
1 1/2 cups sugar
2 Tbsp. cornstarch
1/4 cup lemon juice
Grated rind of 1 lemon
Mix all ingredients together. Pour into an unbaked crust and bake at 450º for 10 minutes. Reduce heat to 350º and bake 20-30 minutes (or until firm in the center). Chill well before serving.
