Ray & Marlene's Peanut Brittle

3 ears of corn (or one 10-oz package of frozen corn)

1 egg, beaten

1/3 cup diced red bell pepper

1/3 cup milk

1 1/2 tsp. baking powder

1 1/2 tsp. sugar

2 Tbsp. melted butter

3 Tbsp. corn meal

1/3 cup flour

1/2 tsp. ground cinnamon

Jalapeno jelly

Cut the corn from the cob. Beat the egg; add milk and mix well. Add the rest of the ingredients and mix well in a large bowl. Cook on a medium-hot griddle. Spoon 4" cakes onto the griddle and shape with a large spoon. Brown nicely on both sides. Serve with butter and Jalapeno jelly. Wow!
